At the downtown Farmer’s Market last week I saw fennel and decided since I’d never tasted it I was going to buy some. What do you know the next day’s newspaper had a recipe for a salad with fennel. My cousin was coming for lunch so I decided I’d make my own version of the salad.
I chopped the fennel and added cubes of melon and strips of prosciutto. I did plenty of taste testing as I chopped and that fennel tasted great! Sweet and crunchy!
I cooked pasta and put fresh asparagus in the pot with the pasta for the last two minutes of boiling.
I put the pasta and asparagus in with the other stuff and added some shaved Swiss cheese and parsley. I used Paul Newman’s Light Thai Sesame dressing to serve it. It was really tasty and I’d made enough to last us for three meals. I’ll make this salad again and I’ll be sure to buy fennel again.
