Dream Catcher Salad

The menu has lots of great selection and it was hard to decide what to order. eating at the courtyard cafe heard musuemMy husband Dave chose the bison meatloaf sandwich, my friend Esther ordered the vegetable quesadilla and I had the  Dream Catcher Salad.  Dave who is a bit of a meatloaf connoisseur said it was one of the best meatloaf sandwiches he’s ever had and as you can see from Esther’s smile she enjoyed her meal too. dreamcatcher salad heard museum courtyard restaurant My Dream Catcher salad was lovely to look at but it was also absolutely delicious! I enjoyed every bite. It came with tomatoes, mixed greens, pepitas( pumpkin seeds), couscous, golden raisins, avocado, and white corn. 

dreamcatcher salad courtyard cafe heard museumIt seemed almost a shame to destroy the beautiful presentation of the salad but I was hungry! I especially enjoyed the dressing a vinaigrette made from the fruit of the prickly pear cactus and I am going to see if I can find a recipe online or a bottled version in the stores here. IMG_5336Since I made a New Year’s Resolution to try to eat more slowly I did try to savor each bite but as you can see there wasn’t even a morsel left. I cleaned my plate. 

I am going to try making my own Dream Catcher Salad at home. I want to go back to The Courtyard Cafe to try their other salads. The menu has five more. They all sound delicious!
